Celebrating 100 Years of La Victoria

I was extremely honored to be invited to a perfectly beautiful evening celebrating the brand, La Victoria’s 100th Anniversary! To even think of a brand having excelled for that many years while keeping the integrity and foundations that they established as a company 100 years ago is incredible. La Victoria was the pioneer of jarred salsa. In 1917, and to this day they continue to make all of their salsas and sauces with real, simple ingredients. Plus, all of their tomatoes are sourced right here in California! Being in the nutrition world, I appreciate this so much, as the ingredients are jarred at their greatest quality, just as if your Abuela/Grandma might do.

My heart and soul come alive in nature, especially at the beach. There is nothing like the sound of the waves, the ocean spray off the sea, and that fresh beachy air. The fact that I love coffee is no secret! And some are surprised by my daily cup as I work in the holistic health  and wellness world. Coffee isn’t all that bad, but there are a few reasons why I may personally take a break from time to time, or even suggest my clients to slow down their coffee consumption.  (More on that in a future post!) Truth is, over the years, I have made some HUGE changes with how much coffee I consume and what is in my cup.

Upgrading what is in your cup can actually boost your energy even more throughout the day vs. slow you down-which most of our coffee drinks actually do. Wow. Another year is coming to an end, and what a beautiful year it was. As I find myself reflecting over this past year, I can’t help but look forward to 2017 and celebrate the possibilities and mystery of what is to come.

The Blue Lagoon. The MUST stop in Iceland.

When planning our trip to Iceland I KNEW that somehow we would need to fit in a stop to this geothermal spa. We considered making the stop at the Blue Lagoon as soon as we got off our flights to Iceland, as the airport is near, and it would be a nice way to begin a trip— but a friend that had been before had suggested maybe finishing our time in Iceland with our stop at this famous spa and Icelandic Landmark. So that’s exactly what we did, it was perfect!

Our first day in Iceland was full (read about our first day HERE), but we weren’t about to miss a beat for our second day exploring this beautiful and mystical country. I could say that this day was my favorite, but really, I’ll say that about each day. Iceland is just magical, full of adventure, romantic, and absolutely picturesque.

Day 2 we woke up and hit the road to the black sand beaches of Vik. Day 2 will take a couple posts to share, because yet again, we packed the day full, and kept going into the middle of the night. The first highlight of the day was horseback riding on these black sand beaches, this was something that both Taylor and I had said was something that we wanted to make sure we would do while visiting Vik.

How does one even put into words the beauty and magic of Iceland? Honestly. I’ve been home from my beautiful adventure to Iceland for some time now, but I’ve struggled to find the voice that I wanted to have as I shared this with all of you. I want to share the beauty we got to take in over the four days we spent driving across the south part of Iceland!
