It's the time of the year that we reflect on all that we're thankful for, and my heart is so full. This time of year deserves a little time to slow down, reflect and share. And the other night, my dreamy guy and I created a mini Thanksgiving for just the two of us. {Menu included below} It was a moment to pause and share our thanks with one another, and enjoy a festive meal… talk about pre-gaming! Haha. I'm already full heading into tomorrow. Coffee The fact that I love coffee is no secret! And some are surprised by my daily cup as I work in the holistic health  and wellness world. Coffee isn't all that bad, but there are a few reasons why I may personally take a break from time to time, or even suggest my clients to slow down their coffee consumption.  (More on that in a future post!) Truth is, over the years, I have made some HUGE changes with how much coffee I consume and what is in my cup. Zoodle Avocado Pesto

zoodle The Perfect Marriage of Green things! I'm a big fan of Pesto and a big fan of Pasta! But there are days that I just want to go about my favorite dishes a little lighter! Because I'm gluten free, if I do pasta I tend to lean towards brown rice pasta, BUT lately I've been feeling a little extra bloated which means my body is trying to work something out so I'm steering towards more anti-inflammatory foods, enter in my Zoodles, Zucchini Noodles!! And kicking dairy out is another way to ditch that bloat and inflammation so I made a tasty dinner using Zoodles and my dairy free Avocado Pesto! You can pair with any protein, I went for chicken! You of course don't have to use my Avocado Pesto to sauce up your fancy little zoodles, all sauces will do!

Oh, Pumpkin. You bring the fall spirit to life. Your scents, your taste, the warm and fuzzy feelings that brings this season to life. 

Ohhhh... Hey! Just a little love going on between me and my beloved Pumpkin. And really, pumpkin, the orange ooey gooey stuff, not a dreamy tall and handsome fella. 😉 (He's on my Christmas wish list!) I could go on about Pumpkin, especially because this magical orange guy is just as wonderful as the Pumpkin in the story of Cinderella! Well, I don't mean go eat a ton because they will benefit your health (I wish), but I switched up the ingredients just a bit to help you feel a little less guilty while indulging on this classic treat this season! This is a fun treat to make with your kids and great to take with you to holiday parties or add to your cookie platters! Healthy-ish Chocolate Nog Shake

  There's something about Egg Nog and the holiday season, it's just a must! I guess that's if you're an Egg Nog fan. 😉 Well, I don't actually drink the "original" Nog, I'm more of a fan of the Almond Milk Nog or Coconut Milk Nog. Going non-dairy here is the way to go for me, and depending on the brand you're buying you'll find a lot less of the refined sugars used in the "original" nog. Nog is still a sugary treat, so I'm not saying it becomes healthy all of a sudden, please continue to be mindful of this treat and enjoy in moderation. 😉 So there's my stance on "The Nog", but now let's talk about this Chocolate business. There's a reason females crave chocolate especially that one time each month. Grain Free Maple Pumpkin Donuts

Bring on the Pumpkin Everything! Pumpkin is full of so many nutritional benefits, and it's great to add to anything... sweet or savory! But my favorite thing to do is make tasty baked goodies around the fall and winter months. (Although, pumpkin is incredibly nutritious all year round) Bake up these easy Grain Free Maple Pumpkin Donuts for a delicious and nearly guilt free side to your morning coffee, breakfast, or a fun treat. Being grain free makes these donuts gluten free too. All you need to do is buy a donut pan, mix up your ingredients, pop them in the oven, and voila! Your Donuts are done! For Icing/Glaze, I created my own on a whim, but you can do so many different things to top your donuts. Drizzle with organic raw Honey, caramel, chocolate-- totally up to you! Gluten Free “Healthy” Pasta?

YES PEOPLE!! It is possible. "Healthy" pasta. AND pasta that is gluten free!! I LOVE my brown rice pasta, in moderation of course. 😉 Brown rice pasta (I'm a fan of Lunderberg's brand) is a great complex carbohydrate. The only ingredient is brown rice. I love this simple dish for quick dinners for just me, myself, and I or even for feeding a group or the whole family. It's simple and you get all that you need in one bowl. There are so many ways to get creative with this basic "Lazy" Pasta dish, so please share your creative additions in the comments! I can't wait to try some of your suggestion. Remember, even though Brown Rice Pasta is a "healthy" way to do pasta, still eat in moderation. But like I always tell my clients, "when in doubt, just add more greens". ‘Zingy’ Turkey Burgers

'Zingy' Turkey Burgers

Do you ever crave a good healthy burger with some good flavor that you can have at home? Umm, been there, done that, so I created this Zingy Turkey Burger that is incredibly tasty. I wanted to work with what I had in the refrigerator so with some green onions, serrano peppers, cilantro, and ground turkey, this creation was born. It's simple, it's healthy, and full of Zing!!

I also made a side sauté that I put on top of my turkey burger and placed the turkey burger over a bed of mixed greens and sprinkled goat cheese on top. Soooo crazy good!

Here's how you make it happen...

'Zingy' Turkey Burgers

-1 lb Organic (White Meat) Ground Turkey
