Happy Holidays My Friends!

I've been doing some baking, which is one of my favorite things to do for friends and family, especially at this time of year! I had been playing around with chocolate chip cookie recipes, and my goal was to create a cookie that was not just gluten free, but grain free as well. My next goal was to not have any refined sugar and to make the cookies low-glycemic... I NAILED IT! I have created a "healthier" (There are still chocolate chips!), grain free, gluten free, paleo friendly, a "lower in sugar" chocolate chip cookie that everyone I served one to said that they needed more, and more, and more! Happy Thanksgiving Friends! I am so Thankful for all of you, and I'm thankful that I can share some great Gluten Free recipes with all of you so hopefully everyone will be able to enjoy what's on their plate this year. All of these recipes taste "normal", actually better than normal. 😉 There's no reason you'll need to make 2 different meals to accommodate the gluten allergies in your family, no one will ever taste the difference and your gluten free friends and family will feel like it is such a treat to get to enjoy a full Thanksgiving spread with the whole family.

While there can be many challenges living with a gluten intolerance, it’s one of my life’s challenges that I’ve learned to respect wholeheartedly by committing myself to a healthy diet and routine.  It definitely takes patience and knowledge to maintain a gluten free diet, but it’s worth it.  Though I personally have not been diagnosed with Celiac disease, my gluten intolerance helps me relate to those who do (I treat myself as if I do have Celiac Disease), so I wanted to share some of my top – simple and tasty tips– for living gluten free for those of you that are new to the lifestyle or that have considered trying this way of life!

  A few weeks ago I had my 1st Pumpkin Spice Latte ever. I had to, I've had this curiosity of why everyone loves it so much. The air was (warmly) crisp that morning  & it was starting to feel like fall (San Diego fall), so I took the plunge. First of all, I haven't had Starbucks in ages, I hadn't had cows milk in ages (months) either, but they don't have my preferred options (Almond Milk or Coconut Milk), so this was a big day... Gluten Free in Charleston, SC

Charleston, South Carolina is such a charming place to visit! We recently had the opportunity to visit Charleston for an awesome event, the Slimdown the South Softball game raising money and awareness for a very important cause, Louis Kids, focusing on childhood obesity. We were so happy and honored to be able to be a part of this event as focusing on living a healthy and active lifestyle is important to both of us. Our good buddy, Roberto was on our team, so of course we ended up winning the game! 😉

We were in Charleston for this very special cause, but of course we had to eat, and my goal when visiting a new city is to try to explore gluten free friendly restaurants. Charleston had several, and if we had more time I would have visited every single one, but we made it to two, I'll consider that great.

I have recently discovered my new trick for when I'm traveling... bring my waffle maker! It's brilliant! Why? Well, there's actually a lot you can make with a waffle maker, but for me, I can make my favorite healthy gluten free breakfast every morning while traveling. I am crazy about these Protein Pancakes that I now make as waffles, it's my favorite meal and recipe from the Nutrition Plan that I live by!

Gluten free in Washington DC

In recent travels to our nation’s capital I was pleasantly surprised by how gluten free friendly the area was. On the first day from some research through Google, I found a gluten free friendly restaurant, Open City, right across the street from our hotel. It wasn’t just “gluten free friendly”, but they actually had g-free options. The staff was even knowledgeable. When I asked how their kitchen made their gluten-free items I was thrilled to hear that they use clean surfaces and that the owners wife is gluten intolerant and everything has to be up to her standards. This made me happy to hear as many restaurants could have gluten free offerings, but lack a clean gluten free environment in the kitchen. This place seemed to do it’s best to provide that.
