{Fresh faced, right after face mask, no filter... which I always use one! Big deal ya'll!}

So it's getting close to my birthday!! I love celebrating and I will never deny that I'm turning one year older... but then again, I will be one year older! Haha. But age is really just a number, right? (you should all be nodding your heads yes, thank you.) Truth is, as the number of my age has been going up, I am honestly feeling younger. Healthier, more energetic, balanced, and a lot more confident in my own skin, which allows me to love life so much more!  This all has to do with lifestyle. So here's a little lifestyle upgrade for all of you... Naturally with age comes the question... what will change? What will go south? And sure, things may change as time goes on, but for right now I feel like I'm thriving! One thing that I especially want to…

Gluten-Free Me / My Recipes

zoodle The Perfect Marriage of Green things! I'm a big fan of Pesto and a big fan of Pasta! But there are days that I just want to go about my favorite dishes a little lighter! Because I'm gluten free, if I do pasta I tend to lean towards brown rice pasta, BUT lately I've been feeling a little extra bloated which means my body is trying to work something out so I'm steering towards more anti-inflammatory foods, enter in my Zoodles, Zucchini Noodles!! And kicking dairy out is another way to ditch that bloat and inflammation so I made a tasty dinner using Zoodles and my dairy free Avocado Pesto! You can pair with any protein, I went for chicken! You of course don't have to use my Avocado Pesto to sauce up your fancy little zoodles, all sauces will do!

"For I know the plans I have for you," declares the Lord,

"Plans to prosper you and not to harm you, plans to give you hope and a future."

Six years ago a very broken girl showed up in Los Angeles for a very unknown adventure ahead. Broken, but hopeful. She had no clue what was in store, and would have never imagined what would actually take place and how it would change her heart, soul, and her life all together. The thought that this adventure could possibly help her put the broken pieces back together, would have never crossed her mind, but that’s exactly what happened. Six years ago that broken girl was me. My world as I had known it had crumbled all around me. My heart was broken into fragile little pieces, and I had no clue what could possibly be ahead. There was fear in not knowing how the healing process would go, and a fear…

"Give Thanks with a Grateful Heart"

There are so many blessings in my life to be grateful for, and I decided to write down to share a few of mine with all of you. Maybe take a minute for yourself to make your own list. Sitting down to do this was such a refreshing game changer in the midst of a crazy day. I was also surprised by a few of the things that popped into my mind as I was writing... you'll see. 😉 It's become a practice of mine to count my blessings, thanks to my mom, especially when certain moments in life are feeling so out of my hands, it's a good time to remember what is in place to be thankful for. Here I go...

I Love You, Pumpkin. Grain Free Pumpkin Pancakes

Oh, Pumpkin. You bring the fall spirit to life. Your scents, your taste, the warm and fuzzy feelings that brings this season to life.

Ohhhh... Hey! Just a little love going on between me and my beloved Pumpkin. And really, pumpkin, the orange ooey gooey stuff, not a dreamy tall and handsome fella. 😉 (He's on my Christmas wish list!) I could go on about Pumpkin, especially because this magical orange guy is just as wonderful as the Pumpkin in the story of Cinderella! Pumpkin is so nutritiously beneficial, full of antioxidants and vitamins, but enough about that!

Onto the Pancakes!

Grain Free Pumpkin Pancakes

These pancakes are easy, grain free, so naturally gluten free. But without the grains this gives you an anti-inflammatory option for those of you struggling with a little extra bloating and inflammation. The pumpkin is a great complex carbohydrate giving you the energy you need, but not spiking your blood sugar the way refined flours

"Surround yourself with people who make you hungry for life, touch your heart, and nourish your soul."

Life. It's such a wild ride, isn't it? If I could share every detail with you, and I'm sure if you could share every detail of your life with me, we would stand staring at each other with our hands over our mouths surprised by the challenges and heartaches we face as we go about our daily lives. But I guarantee you, if we stood with each other sharing all of our blessings, we would be smiling and so happy for one another.

My friends have become a lifeline for me, a huge blessing! They have given me a safe space to share my highs and my lows. Truly, they inspire me, teach me, encourage me, and their presence in my life nourishes my soul!

The last several months have been busy... I like being busy, so I feel like I say …

"Take care of your body, it's the only place you have to live"

I’m going to let you in on a little secret… since I’ve been back from my summer in “Paradise” I have been so out of my routine and honestly not been feeling great about myself. My workouts aren’t the same, my eating habits are a little under par, and my skin… well, I’ve actually never seen my skin like this, it’s struggling, BAD. I blame the skin factor on everything else in my daily life that is out of whack, so I’m taking control over all aspects of my life and doing what I know to do to get myself back to feeling like my true self again. The good thing is, I do know how to do this for myself, after all, I coach people daily on living their best lives. Just goes to show, I’m human. Even though my career is nutrition and health coaching…

That Hallelujah Moment

Giving

HallelujahMoment Have you ever experienced a "Hallelujah Moment"? Like a moment where you just stop dead in your tracks and just need to give thanks for all that has been done in your life, and that is being done? Maybe it's not even a moment where you're giving thanks or praise for what is going on in your own life, but perhaps it's even in those moments where you actually feel purpose, and you know God is doing something with this life He has given you. feedingswithkaren I've experienced several "Hallelujah moments", but one that has captured a large piece of my heart forever is the moment you see in the top picture. In fact, there were a lot of moments like this last year (October 2014) when I was fortunate enough to get to travel to the Philippines with the non-profit organization, Kusewera (I traveled to Malawi, Africa with them as well) to serve at an orphanage, a girl's home,…

"And so we know and rely on the love God has for us. God is love. Whoever lives in love lives in God, and God with them."

1 John 4:16

I'm a hopeful person. I believe in big things, and I have big dreams of my future. But I've got to be honest, I'm not always the best at trust or keeping my thoughts focused on the hope that I truly believe we all deserve to give ourselves. Funny thing is, I actually trust others very easily, sometimes too much. Probably a weakness and a strength of mine. BUT I struggle with trusting God. Which is crazy to me, as He is the very core of my soul and my life, and everything I believe and all of the joys in my life point straight back to all that He has done for me and in me. What is up with this struggle?

Well,

"Be the Light" Matthew 5:14

My Cross Necklace.

I received a very beautiful and uniquely shaped cross necklace as a gift several years ago from my family and it has been something I have worn proudly and close to my heart. I love the opportunity I get when it catches people's eye and I have the opportunity to share what it means to me and share my faith. You may even remember seeing me wear this special necklace in my promo pictures wayyy back when when I was first on The Bachelor.

Tenley Bachelor

So here's the story of my Cross Necklace in Paradise... One night we were all standing around the kitchen area (you know where you always see us sitting there sweating and stuffing our faces!) and Juelia said to me, "Ten, where is your necklace?!" The dainty little chain was laying broken around my neck. My heart dropped. Where is my cross?! Everyone... seriously EVERYONE, producers, camera & …
